Well finished with the egg masala, tastes nice if I may say so myself. Going to a friends place in the evening with the egg masala, she's recovering from cancer surgery so deserves a bit of pampering. Well the recipe with the snaps of the finished dish is below for anybody who wishes to try it out.

- Eggs 4 nos.
- Green chilies 2 nos or more if you want to make it more spicy.
- Garlic 4 nos. large cloves
- Ginger about half a finger length
- Onions 2nos. medium sized
- Grated coconut 1/2 cup
- Red chilly powder 2 tsp
- Malvani masala 2 1/2 tsp
- Garam masala 1 tsp
- Cummin seeds a pinch
- Dry red chilly 2 nos.
- Hing a pinch
- Coriander
- Salt to taste
Preparation :
- Hard boil the eggs.
- Add 2-3 tbsp of oil in a pan and heat.
- Add sliced onions and fry till golden brown and slightly translucent.
- Add the grated coconut and fry till it changes color.
- In a mixer add the onions, grated coconuts, green chilies, ginger, garlic and water. Grind to a very fine paste. The paste has to be very fine otherwise the coconut can be felt while chewing and that is not a good idea.
- Add 2-3 tbsp of oil to a pan and heat.
- Add the cummin seeds when hot.
- Add the hing and red chilies and fry for a minute.
- Add the paste from the mixer and cook till a bit of oil can be seen on the surface.
- Add water to thin the mixture to a desired consistency but remember it is not a good idea to make it too watery.
- Add salt to taste. I normally add it to a bit of water and then add the solution to the mixture.
- Cut the eggs in to 2 and add to the curry with the yellow facing downwards.
- Allow it to cook for a couple of minutes.
- Add the finely chopped coriander to garnish.
